Herb Crusted Porkloin
Ingredients
- 1 3 lbs Pork Loin
- 2 Tbsp Olive Oil
- 1 tsp Salt
- 1/2 tsp Black Pepper
- 1 C Panko Bread Crumbs
- 1/4 C Chopped Fresh Parsley
- 2 Tbsp Chopped Fresh Rosemary
- 1 Tbsp Chopped Fresh Thyme
- 2 Cloves Minced Garlic
Instructions
- Preheat your oven to 375°F (190°C).
- Pat the pork loin dry with paper towels.
- Rub the pork loin with olive oil, salt, and pepper.
- In a small bowl, combine panko breadcrumbs, parsley, rosemary, thyme, and minced garlic.
- Press the herb mixture firmly onto all sides of the pork loin.
- Place the pork loin in a roasting pan.
- Roast until the internal temperature reaches 145°F (63°C). Roughly 30 minutes, but make sure to start temping the middle periodically at 20 minutes.
- Let the pork loin rest for 10 minutes before carving.
If you don't have fresh herbs, you can use 1 Tbsp of dried mixed herbs.
